Ramadan Kanji

Rmadan is the holiest month for Muslims all around the world.Usually break their fast with kanji, a dish prepared with meat and vegetables.

Ingredient

  • Raw rice -½ cup
  • Chicken or meat (with bones or without bones) -50g or100g
  • Carrot – 1 small finely chopped
  • Tomato – 1 medium sized roughly chopped
  • garlic -4 cloves finely chopped
  • Turmeric powder – a tiny pinch
  • Red Chili powder – 1/4 tsp
  • Pepper powder-1/4 tsp
  • Fenugreek seeds-1 tbsp.
  • Green Chilies – 1 (if need)
  • Thick Coconut Milk – 1 ½ cup ***How to extract milk from the fresh coconut
  • Water – 3 cups
  • Salt – to taste

Method of Tempering Ramadan Kanji

  • Oil – 2 tsp
  • Ginger Garlic paste – 1Tsp
  • Curry leaves
  • Onion – 1 medium sized finely chopped
  • Rampa-small piece
  • Cloves – 1
  • Cardamom – 1 whole

Method of Making Ramadan Kanji

  1. Take raw rice and wash it in water for 3-4 times.
  2. Drain the water and keep aside.
  3. Heat the oil in a pan and add the items listed under ‘to temper’.
  4. Fry till onions turn transparent.
  5. Add chicken or meet to pan and cook few minutes.
  6. Then add the rest of the ingredient to it.
  7. Add water and cook until mushy. Once it cooked mash it well.
  8. Then add coconut milk give a quick stir.
  9. Serve hot or warm.

If you have you can add little drumstick leaves to make it a little more rich and nourishing.

If you are a vegetarian ca add dall instead of meat.
