Medu Vada
A savory snack from south India
This light and fluffy deep-fried snack is so easy to make and tastes absolutely delicious… it is made with urad dal.
Ingredients
- black gram/ urad – 500 grams
- Green chillies – 4 to 6 chopped
- Onion – 1 chopped
- Ginger – 1 inch size I piece
- Curry leaves – 3 sprigs
- Cumin – 3/4 Tsp
- Pepper – 3/4 Tsp
- Asafoetida – 1/4 Tsp
- Salt – To Taste
- Oil – For Frying
Method
- Soak urad dal for 4 hours at least.
- Water should stay above the urad dal.
- Rinse the urad dal well and drain off any excess water.
- Add some salt and mix together and add it in to a blender.
- Do not add too much of water while grinding. Add less at the beginning, if required can add more.
- Grind it to a smooth paste.
- Now transfer this to a big bowl.
- Add the ingredients listed under “ingredients” and mix well
- Beat it nicely with hands to incorporate air into the batter.
- If the batter is little watery add 1 tbsp of rice flour.
- Do not add too much of rice flour it makes the vadas hard.
- The batter for our Medu vada is ready.
Frying
- Heat the oil.
- Oil should be on a medium heat.
- Wet your hands with water
- Take some batter and make a small ball
- Now make a small hole at the center with your thumb and drop it in Oil.( Like a donuts)
- Let it fry for some time.
- Flip it to the other side and let it fry for some more time until golden brown.
You should wet your hands especially palm before making every vada. If not, the mixture may stick with your palm or use a banana leaf instead of palm.
