Fried Rice
Ingredients
- 3-4 cups of Cooked Rice
- 4 Tablespoons of Gee
- 3 Tablespoons of grated Ginger
- 1 tablespoon of grated Garlic
- Few curry leaves optional
- 1 cup of Shredded or diced Carrots
- 1 cup of Shredded or diced Cabbage
- 1 large Onion
- 1/2 a cup of Spring Onions
- 500 g of Cooked Chicken breast shredded
- 2 Eggs beaten
- 1/2 teaspoon Turmeric
- 2 Cloves
- 2 Cardamoms
- Salt to taste
Instructions
- Heat a large skillet.
- Work in medium heat.
- Pour gee or oil.
- Add ginger and garlic, sliced onions, turmeric, curry levees, cardamom, and clove and cook it on medium flame, leave until they turn golden brown.
- Once the mixture is cooked, add the shredded chicken and mix, cook for 2-3 minutes if you prefer the chicken to be crispy, leave it longer.
- Add the vegetables, the carrots and cabbage are the first, followed by your preferred vegetables in this case I used spring onions. You can use leeks also.
- Fry until tender..
- Slide the mixture into one side of the pan and gently pour in the beaten eggs onto the other side..
- Using a spatula or wooden spoon scramble the eggs. Once cooked, mix the eggs with the vegetable mix..
- Once all the ingredients are cooked, add the rice.
- Stir and fry the rice and veggie mixture until all combined.
Recipe Note:
*Day old cold rice works best and prevents the rice from being mushy
