Mung Eta Kiribath (Green Gram Milk Rice)

Ingredients:

2 cup white or brown rice
1 cup soaked mung beans (Green Gram)
4 cups of water
1 can coconut milk or 2 cups of coconut milk
salt to taste
Small piece of cinnamon.(it will give a good smell)

Steps:

Soak mung beans in water over night.
Wash rice and mung beans with water.
Add all the ingredients except coconut milk in to a pot and cook.
Cook till the rice is soft and the water is absorbed.
Now add the coconut milk and stir.
When the rice is ready, reduce the heat to low flam.
Simmer the rice and coconut milk mixer till the rice is very soft and creamy.
If needed add more coconut milk.
Taste for salt
(If need)Add salt according to your taste.
Serve on to a platter and allow cooling and cutting into diamond shapes.
You can sever with Lunu Miris, Katta Sambool, or Meat curry
If anyone like sweet they can eat with sugar or juggery.
